Migrating down to the First State from New York City, Raheem Whitted has taken over the food counter at Hylton’s Market in Camden.

Whitted, along with help from Chef Frank Pope, said he wants to bring Delawareans something they haven’t had before and added that he’s already starting to collect regulars.

Taking a break from some food prep on March 8, he spoke with the Dover Post about his new venture.

Q Since you opened, how has the reception been?
A I get people coming in saying that I’m the best-kept secret in Delaware right now. Every person that comes in here, I have no problem giving them samples. I’m not scared. If you want to taste it, if you don’t like it, I’ll pay for your plate. That’s my motto right there.

Q What makes your business unique to the area?
A I’m trying to give people something they didn’t have out there, because you come out here and it’s the same old thing. You can either eat pizza, Chinese food or KFC. I’m trying to give them a little something different, a little flavor, a little soul.

Q What are some of the more popular items on your menu?
A The ox tails go like crazy, the beef ribs go like crazy. A lot of people like the Spanish rice and beans. I get a lot of requests for just that. It’s because they don’t have it, it’s not here.

Q What is the variety like on the menu?
A It depends on what we’ve got going on for the day. On the back of the menu you can see the daily specials that I have every day. Besides the regular stuff you can come in and get, every day I’m changing the specials.

Right now we’re trying to expand the menu even more. I’ve got a lot of ideas. I went to school for two years to learn how to cook. There’s just not a variety of food around here, and I keep stressing that. I want to give everybody what they’ve been looking for.

Q What are some other plans for the future?
A I own a food truck that’s going to be on the road sometime in April. I want to take the food that I’m cooking every day, and I want to bring it on the road. If you can’t make it here, I’m coming to you. At the end of the day, I just want to put a smile on somebody’s face. The biggest compliment you can give me is not saying anything, just have a smile on your face while you’re eating the food.
