If there’s any German ancestry in your family, you’ve already guessed it. Schmierkase (SCHMEER-kassa) is German for any smooth, unripened cheese with curds.

That’s cottage cheese to Americans. The German treat is a big dollop of apfel (apple) butter on top. Try it.
